When you have more berries than you can possibly use, make this easy sauce. Drizzle it over cakes or ice cream, or stir into seltzer, lemonade, or sparkling wine.Yields 3/4 cup sauce.

ingredients

1 pint (2 cups) fresh raspberries, blackberries, blueberries, strawberries, or a mixture, rinsed and drained; or frozen berries, thawed with juice
1/4 to 1/3 cup granulated sugar, to taste
1 to 2 tsp. fresh lemon juice

how to make

Put the berries, 1/4 cup sugar, and 1 tsp. lemon juice in a food processor or a blender and purée until smooth. Taste the sauce and adjust with more sugar or lemon juice or both, as needed. If the berries are seedy, pass the sauce through a sieve by pushing with the back of a spoon.

Make Ahead Tips

This sauce will keep, covered, for up to a week in the refrigerator.
